Macrobiotic nutrition combines healthy traditional food, including fresh vegetables, whole grains or their products, beans, fruit, nuts, seeds, pickles, fermented foods, herbs, seasonings, sea vegetables and teas. There is also an emphasis on using organic, non-gmo whole foods, free of chemical pesticides or excessive processing.

Each person is unique and discovers the best foods for health based on macrobiotic principles. Many thrive being vegan and some choose to include a little animal food. Macrobiotics is an open, flexible and adaptable approach to individual nourishment that also includes a wide variety of foods that can be prepared for social events and special occasions.

The Basics of Food Preparation

Macrobiotic food preparation is also unique. Natural and simple ingredients are best for producing delicious meals which are nutritious, tasty and attractive. The cook has the ability to bring out the best out of the ingredients. Stronger cooking, the use of greater pressure, salt, heat and time, all make the energy of the food more concentrated. Lighter cooking, the use of less pressure, salt, heat and time produce lighter energy. A good cook manages these energies according to the individual needs and creates healthy balance by varying the cooking styles.

Variety is a key to macrobiotic food preparation. Incorporating the following techniques in your day-to-day macrobiotic cooking creates healthy variety:
1. Selecting ingredients within the following categories: grains, soups, vegetables, beans, sea vegetables, condiments, pickles and beverages.
2. Incorporating many methods of cooking: boiling, steaming, sautéing, frying, pressure cooking, etc.
3. Using various styles of cutting vegetables.
4. Adjusting the amount of water being used.
5. Adjusting the amount of seasoning and condiments being used.
6. Deciding the kind of seasoning and condiments to be used.
7. Adjusting the length of cooking time.
8. Knowing when to use of a higher or lower flame for different styles of cooking.
9. Knowing which combinations of ingredients and what kind of dishes will create balance for an individual need.
10. Adjusting the ingredients used and cooking methods for changing seasons.
11. Adjustments in cooking for the type of daily activity.
12. Adjustments in cooking for age and sex.

The way of eating is also important for proper nourishment. Please try to keep meals peaceful and relaxed. Try to eat regularly two or three times a day.
Each dish has particular flavors and purposes, so it is better not to mix them and stir them all together on your plate.
