What is Gluten? Why Gluten Free?
Gluten is a protein present in grains, wheat, barley and rye. These proteins are hard to digest and irritate the gut and damages the lining which causes inflammatory responses. Some people might show obvious responses where as some would experience more subtle side effects. Regardless, even people without celiac disease can benefit from a gluten-free diet! :)
Many people tend to have a mild intolerance or sensitivity towards gluten which may show in the form of bloating, headaches, fatigue or diarrhea. If that is you, you might want to try excluding gluten from your diet and see how you feel. Gluten-free diets just might help with improving your quality of life.

In this class we are going to share the exact recipe we use for our paleo cookies. These cookies are not only gluten-free but also vegan and white-sugar free. Two of our three cookies are even nut-free so it will be suitable to pack for school snacks. In this class, the focus will be on how to use nuts and seeds in gluten-free baking.
*This will be a hands-on class. Please bring your apron!
