Ishigaki Green Noodle 碧の麺 - 120g

Ishigaki is a Japanese island, where you can enjoy the breathtaking beauty of the seven-color shining sea. This Green Noodle is named after the rich nature and みどり色 (Midori color) of the Ishigaki sea.  It has also been exhibited in the Okinawa Fair in 2016 and received a lot of recognition from both local and overseas people.

The green in the noodle comes from Chlorella originated from the Yaeyama region of Ishigaki.  Chlorella is a green algae with many health benefits - ex. boosts immunity, acts as an antioxidant, improves cholesterol, and has anti-inflammatory properties etc.

With Chlorella added to wheat flour, the gluten and alpha starch of the noodle is strengthened.  The noodle becomes more elastic and turns into a 'mochi' like texture due to better water absorption and retention.  The nutritional ingredients of the noodle can nourish the body and mind.


Suggested Use:

  • Cold Noodles Style
    Boil the noodle with boiling water for 3 to 4 minutes. Rinse with cold water and then dispense the water on the dish. Serve with your favorite toppings such as Kinshin egg, cucumber, tomato etc. Pour the soup on it when you serve.
  • Yaeyama Soba Style
    Boil the noodle with boiling water for 4 to 5 minutes. Pour the soup on the soba and prepare it with your favorite ingredients.
