Sauerkraut is shredded fresh cabbage that has been fermented by various lactic acid bacteria, including Leuconostoc, Lactobacillus, and Pediococcus. It has a natural sour flavour which results from the lactic acid that forms when the bacteria ferments the sugars in the cabbage (no added vinegar!).

HOW WE MAKE IT
We make our sauerkraut traditionally in small batches by hand. First, we shred the fresh cabbage and massage it with Himalayan Crystal Salt, before allowing it to ferment in a jar for 3 days. After the first fermentation, we let it further ferment in low temperature until it's ready to be consumed.
Sauerkraut especially goes well as a condiment with food with high fat content such as meat or nuts. We recommend a slice of sourdough bread and a slab of almond butter topped with our Living Sauerkraut.

I've tried the Japanese flavour (love shiso), Tumeric (a bit soggy but still good) and this. All very good. I am now a fan!
