Easy Feta Tomato Butter Bean Soup (Vegetarian)


Starting to crave a hearty warm soup? 
Inspired by the recipe I learnt from Maria form Greece who introduced me to a tasty bean called "Giant Beans" (And YES! They are huge and super creamy!!), I created this instant version of the Gigantes Beans Soup with a twist of added feta cheese.

The creaminess of the beans will not beat that of the giant beans but it is good enough for a recipe you can whip up in 30 minutes. 

I chose cherry tomatoes over the large tomatoes as they have more of an intense flavor that will help with the speed cooking. Also I choose the beans that are cooked with no additives so that I can used the liquid that it is cooked in as well. This will add flavor and texture to the soup with less cooking time. 

Overall, the secret to the tasty soup is...the generous amount of extra virgin olive oil used in the soup. 
I remember when I first learnt Greek cooking from Maria, I was a bit shocked with the amount of olive oil that goes into the recipe and even more surprised how you don't notice it when you eat it!!
But over the years I've come to learn that olive oil is one of the healthiest oil that you can get and its brain food. We do need oil for our healthy brain function and anti-inflammatory diet. 

So, here you go. "Keep calm and add (Good!) oil." 
Easy Feta Tomato Butter Bean Soup (Vegetarian)
PS. The good thing about this soup is that you can make a batch and serve it the next day with pasta too. The flavor gets richer and can also be used as sauce for your proteins as well. 

Easy Feta Tomato Butter Bean Soup (Vegetarian)
(6 servings) 

Ingredients 
1/2 cup., Extra Virgin Olive Oil
1 large Onion, minced
1/4 tsp., Natural Salt
2 Bay Leaves
1/4 tsp., Black Pepper 
1/4 tsp., Chili Flakes 
6-7 cloves, Garlic, peeled
400g, Canned Cherry Tomatoes
400g, Canned Butter Beans
400ml, Filtered Water
200g, Feta Cheese
1 Tbsp., Herb Mix

For serving (Optional)
A drizzle of Extra Virgin Olive Oil 
Chopped Fresh Herbs of Your Choice (Basil, Thyme, Parsley... etc.)
Instructions

  1. In a large pot, heat up 1/2 cup of extra virgin olive oil with the black pepper and bay leaves. When it starts to warm up add the garlic and onion. Mix well while heating up

  2. When the onion starts to get cooked, add the chili flakes and cherry tomatoes including the liquid in the can. Add 400ml filtered water in the can and rinse off the tomato juice and add all to the pot!

  3. Add the beans including the liquid. ( Make sure the beans are unflavored and no additives. This brand is beans and water only!) Mix in and cool at low flame for 20 minutes.

  4. When the soup is cooked sprinkle in the herbs and break in the feta cheese to serve. When serving, top with a drizzle of extra virgin olive oil and fresh herbs of your choice!
