Lobster
We got our lobsters from Seafood Society, where they have this frozen lobster that is so close to fresh lobster when defrosted. It's a hassle free way to create your own "fresh lobster".
Also the beautiful tomatoes we will be using are called Piennolo tomatoes from Italy. They are an absolute flavour powerhouse. It reminds you of tomatoes actually being a fruit.
To keep the recipe dairy-free, we will be using cacao butter as a butter replacement which is amazing in savoury cooking.
When you have beautiful ingredients on hand, cooking is extremely easy as you don't have to do much to "fix" the flavour. It will just naturally taste fresh and delicious.
This dish can be prepared in 20 minutes and you will definitely impress yourself.

When I crave for a maki roll, this is what I go for!
With our ready-to-eat cauliflower rice, this vegan maki roll for 2 can be made in 5 minutes.
It's not the same as a rice maki sushi but I must say this is a great sushi fix when you want on stay on a low carb diet.
The best part (aside from it tasting good!) is the feeling after eating. Its light and you can move on with your day. No carb crashing.
The secret is the chia seeds that I use as a "binder" and the added sauerkraut for a happy gut and also happens to add to the sour flavor like the rice vinegar in sushi! I like the Japanese flavor as it has added shiso.

This recipe is for you.
1. It's low in sugar - obviously!
2. It's tasty - the perfect balance of sweet and sour💖
3. It's a great pick-me-up and I find it tastes like a baked custard with raspberries.
And... it's SOOOOO EASY!
My kids and husband like this bread so much that I have to bake it quite often lately. Luckily, I can do the prep within 10 min and the rest is just baking time.
With the original recipe, I used fresh raspberries which was nice and moist. However, due to the moisture, the bread cannot be kept for long.
By changing the fresh raspberries to freeze dried raspberries, they are a bit dry in the beginning... but after a few hours, it soaks up the moisture and becomes really JUICY💖
I like it so much that sometimes I even double the portion in this recipe.
The low sugar lemon icing is a hit for my children, but a miss for my husband (he peels it off!) so you can choose to opt out for this one.
This is the powdered monk fruit sweetener that we will be using! If you don't have this on hands, you can powder it yourself too.
Remember to use a high-power blender to powder the monk fruit sweetener. It won't work if it is not in powdered form!

If you love lemon cake, we think you'll like this recipe too as it's super easy and healthy (no grains! and no dairy! low in sugars!) at the same time.
We've used tapioca flour and coconut flour for the flour mix and no wheat flour, hence its gluten-free and Paleo friendly.

If you know the basic flavor components that make up a salad dressing, you can make your dressing with almost anything you have in your kitchen!
Here are the basic flavor components for a salad dressing.
Oils - about 50%
Acid - about 30%
Salt - about 10%
Sweetness - about 10%
Plus some added flavors like herbs and spices
This ratio will vary according to what you are trying to achieve but its the basic rule I follow.
For example, if you want to make a sweet dressing you'll increase the sweetness and lower the other components like oli.
For this recipe I've used the pink grapefruit for the "acid" and "sweetness" component so we don't need to add any vinegar or sweeteners!
It might be useful to write down the flavor components until you get used to this. For this recipe the chart will look like this.
Oil - Extra Virgin Olive Oil
Acid - Pink Grapefruits
Salt - Himalayan Pink Salt
Sweetness - Pink Grapefruits
Plus some added flavors - Pink Peppercorn
The flavors are not limited to one ingredient and you can have 2 or more ingredients for each flavors. For example, for "salt", you can use soy sauce and miso to create a Japanese dressing.
As this pink grapefruit salad dressing is such a simple recipe with only 4 ingredients for the dressing, we want to make sure we use quality ingredients as all the flavors from each ingredient will be the key feature.
For the oil part I used ILIADA Early Harvest Extra Virgin Olive Oil.
ILIADA Early Harvest is produced by the first batch of hand-picked Koroneiki olives, that are still unripe. Olives are cold-pressed within a few hours maintaining their quality and aromas, while the olive oil is bottled immediately, without going through any filtering. It has a strong aroma of fresh green herbs with a fruity & intense taste that goes well with the grapefruits. It’s a well-balanced extra virgin olive oil with low acidity and a pleasantly bitter aftertaste.
The key ingredient that makes this dressing special is the pink peppercorns.
These peppercorns are full of flavors and not as spicy as the black peppers. It also has a sweet taste to it which is pleasant when you bite into it.

Going Keto can be challenging when you run out of ideas. One way to breakthrough this challenge is to have an array of different sauces to make the same ingredient taste like a new invention.
This recipe contains no added sugars and is incredibly keto friendly. (Plus it's vegan, gluten-free and soy-free!)
I love Harissa paste and when I received these beautiful organic jalapeno, I was inspired to make a super spicy and flavourful harissa sauce in a green color. I thought by using raw Jalapeno, I would make a VERY spicy sauce... but this miserably failed. To my surprise, raw Jalapenos are not that spicy. But they are very tasty.
My intention was to make an eye-watering spicy sauce, but I never imagined how much "umami" this dip would contain. It's sour, tangy, creamy, crunchy and mildly spicy.
In the end, I did manage to make a spicy dip, but not with Jalapeno. I had to use habanero, which I will share in another blog :) (WARNING! this will be really spicy!)
WARNING: use gloves and NEVER touch your face after working with jalapeno.

Especially if it doesn't require fermentation.
In this blog, I'd like to share a simple yet tasty vegan cheese recipe.
Here are the tools and ingredients you'll need.
Soy Milk.
Pure Soy milk with simple ingredients (Soy and water!) is the best.
Lemon Juice
Cheese cloth
It is good to have a tight weave cloth and not the muslin cloths for this cheese.
Use a heat resistant spatula to mix the soy milk in the pot.
...And a sieve!
Once you have that all, let's get started!
Vegan Ricotta "Cheeze" (no fermentation)

Rainy season + kids at home = we need to be creative to keep them entertained with some healthy treats!
This is a recipe that I came up with when I had to keep my girls occupied with some activities during the heavy rain during Hong Kong summers. The beauty of this recipe is that you can whip this up in 5 minutes, get the kids busy with the shaping and bake it in 10 to 12 minutes, depending on your oven and the thickness of the cookies. There is also no such thing as "underbaked" with this recipe as all ingredients can be eaten raw! It's just almonds made into a cookie shape!
As a parent, I want my children to have healthy treats and so I try as much as possible to avoid processed ingredients. But my children want to have sweets that look and taste like the commercial products out there.
This recipe will satisfy both desires... Completely!
I used almond flour and almond butter as a base, coconut sugar ( a low GI sweetener) as the sweetener and flax seeds as an egg replacement.
The key is to use this almond butter with cacao butter. Because the whole cacao nibs are ground into this almond butter, it also has a good amount of cacao butter that will replace the butter in the cookie recipe. This will help hold the cookie together when it cools down after baking.
The other key is to to keep the size of the cookies the same so that they can bake evenly. I used a small ice cream scoop to scoop the dough and pass it to the children to shape the cookies.
