WHAT IS WATER ROUX?
A popular method of making soft bread is to use "湯種 (Yudane)" which in English translates to "water roux." It refers to a technique in bread-making where a portion of flour is cooked with water to create a thick paste, which is then used to enhance the texture and moisture of the final baked product. This method is commonly used in making soft breads, such as Japanese milk bread.
