How to Brew 🧫
- Combine 🥛: Place 1 tsp of milk kefir grains into a clean glass jar. Add 250ml (1 cup) of fresh whole milk (A2, organic, or full-fat milk works best).
- Cover : Cover the jar loosely with a breathable cloth, coffee filter, or loose lid secured with a rubber band to allow airflow while keeping dust out.
- Ferment ⏳: Leave at room temperature (20°C–25°C) out of direct sunlight for 18–24 hours.
- Strain & Enjoy 🥣: Once the milk thickens into a yogurt-like consistency, strain out the grains using a plastic or stainless steel mesh strainer. Enjoy your fresh milk kefir and reuse the grains for your next batch!

Short Delay:
If you cannot brew immediately, store the unopened package in the refrigerator (4°C) for up to 24–48 hours to keep the live cultures dormant.
How to Take a Break from Brewing ⏸️
Need a pause from making daily kefir? You can put your grains into "sleep mode":

Short Break (Up to 2 Weeks):
Place the grains in a clean glass jar, submerge them in 1 cup of fresh milk, seal tightly with a lid, and store in the fridge. The cold temperatures slow down fermentation. Change the milk every 7–10 days to keep them fed. -
Resuming:
Strain out the cold milk (discard it), add fresh room-temperature milk, and resume fermenting at room temperature. Note: The first batch after a break may take a little longer to wake up!

It is common for beginners to wonder about the difference between healthy fermentation and bad milk:

⚠️ Do Not Consume When:

- Foul Odor: The mixture emits a harsh, rotting, or putrid odor rather than a pleasant sour/tangy aroma.
- Pink/Red Discoloration: The liquid or grains turn an unnatural pink, orange, or red color (a sign of harmful bacterial contamination).
If any of these signs occur, discard the batch, sanitize your equipment thoroughly, and start fresh.
