We started by ditching the cheese, but we didn't want to lose that savoury, umami depth. Our secret? A generous sprinkle of nutritional yeast, giving it that cheesy, satisfying flavour while packing in extra B-vitamins. We packed it full of fresh, aromatic herbs and the highest quality extra virgin olive oil we could find.
But our true obsession? The sprouted walnuts.

We initially created it as the perfect partner for our zucchini noodles, but we quickly discovered it was too good to be confined to one dish. Why You Won't Find Our Pesto on a Supermarket Shelf
This is a point of pride for us. You will not see this jar in a massive supermarket chain, and there's a very good reason for that.
Supermarkets demand a shelf life of a year or more. To achieve that, products are often loaded with preservatives, stabilizers, and undergo processes like pasteurization that kill off harmful bacteria—along with the beneficial enzymes and delicate flavours we cherish.
We refuse to do that.
Our pesto is raw, unpasteurized, and contains absolutely no chemicals. The only things keeping it fresh are a small amount of salt and the layer of Extra Virgin Olive Oil on top that acts as a natural barrier, slowing down oxidation. This means it's alive, vibrant, and packed with the micronutrients that are often lost in mass-produced products.
