The term "fava" is used to specifically refer to this dish rather than the whole fava beans or broad beans themselves.

Ingredients:
1 cup Greek fava beans (yellow split peas)
4 cups water or vegetable broth
1 onion, chopped
2 cloves of garlic, minced
2 tablespoons olive oil
Juice of 1 lemon
Salt and pepper to taste
Optional toppings: chopped fresh herbs (parsley, dill), chopped red onion, olive oil and capers

Instructions:

  1. Rinse the fava beans under cold water to remove any impurities or debris.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent and fragrant.
