What is Sourdough? Our gluten-free sourdough is naturally fermented using gluten-free flour and filtered water. No commercial yeast—just wild lactobacilli and yeast cultivated over 8–12 hours (depending on Hong Kong’s weather 🌡️). This long, slow fermentation creates a bread that’s gentler on your digestive system, with that signature mild tangy flavor from natural lactic acid. 🍞🌱
