We have made this for 2 servings. You can either share with your loved ones or, open a pack and serve half for lunch and the other half for your dinner (no sharing here ha!)
These ideas are all very adaptable to meat and veggie add-ins you may already on hand like leftover taco meat, grilled chicken, or a rotisserie chicken. It’s a great way to use up any odds and ends in the fridge.
Defrost frozen rice on the counter for about 15 minutes ahead of time, and then squeeze out some of the excess water before adding it to the pan. You could also instead microwave it for 30 seconds or so.
Wait till the end of cooking to season cauliflower rice with salt. That way it’s less likely to become soggy, as salt tends to draw out moisture.
